Hi,
If you simply want to change it to your language, you can do it on the Layout Options -> Search box layout panel: http://i.imgur.com/PNd3POf.png
In case of multi language installations using WPML or PolyLang, you can translate it as a string translation, since it is a dynamic text: http://i.imgur.com/lNToMUS.png
