Can Ajax Search Pro replace / disable native WordPress search capabilities ?

I have set Ajax Set Pro to exclude some posts attached to a given category; however one can still display post excerpts using something like
    http://mysite/?cat=x
    or
    http://mysite?s=xxx

    Hi!

To disable the search page feature alltogether and leave the live results only, then you need a separate plugin/code. I believe this article will cover that: How to Disable the Search Feature in WordPress

If the search is performed via the Ajax Search Pro search form, and the search results override option is enabled, then the search results are replaced with the ones from the search bar. In case you are looking for that, then these documentation section should help you out:
    Results override
    Replacing the theme search
