I would like to display in the sidebar all the categories of the posts… I think the setup is right but its not showing!

I believe the issue is, that search settings are disabled globally. You can enable the settings icon, the default visibility, and the layout here: https://i.imgur.com/yoWIBa7.png
Feel free to experiment with those options, as you like.
