I cannot find the step by step tutorial / instructions in the documentation.

It is a very specific case with specific custom fields, we cannot make a step-by-step tutorial for it. But you can find all the custom field filters information here: https://documentation.ajaxsearchpro.com/frontend-search-settings/custom-field-selectors
That includes a video for a very similar setup as well.
