Make sure to enable the search override feature. That resolves that in most cases, however it is still very much possible that the query order is reset for the results page, because it works differently from the live results. The plugin will try to force that individual order, but there is still a possibility that it may not work.

I assume you are reffering to the search results page right?
That is unfortunately out of the control of the plugin. Themes are usually not very well prepared to display results other than posts/pages, as default WordPress search only does that. While Ajax Search Pro tries to add the title/content and image hooks wherever possible, it is up to the theme search archive template to display the results.
If your theme comes with a results page customizer, then I recommend checking that, some themes have options to show media files on the results page and options to customize that layout.

Are you using the default posts or products widget there? Custom made widgets or addon widgets may not recognize the override and will simply ignore the custom query.
The loop grid with the posts widget may work, but it has not been tested for 100% of the cases yet. I suggest staying with the default posts widget, that should work all right.

I’m afraid that is not possible at the moment. We may work out a solution some time, but I can’t promise that in the nearest, as custom tables need to have some sort of a connection (foreign key) with the posts or other tables and it is bit problematic.

I assume the galleries are some sort of a custom post type on their own? It is probably not possible, because the categories are likely connected to the actual media files and not to the galleries.
