Is it possible to make our own custom theme, so that we are fully in control over the Results output design?

If you mean the search results page, then it is fully controlled by the theme you are using, the plugin cannot affect that.
If you want to make some modifications to the Live results, then it is possible either:
– Using the advanced title and content fields for minor changes
– Using the templating system for permanent, major changes
